Geraniol and linalool, monoterpene alcohols obtained from aromatic plants, impart floral aromas to various foods and beverages such as fruits, wines and beers. In this project, plant-derived geraniol and linalool synthase will be expressed in lactic acid bacteria (LAB) Lactobacillus plantarum and strains with anticipated yield of these two compounds will then be used for the production of fermented beverages on a laboratory and pilot scale.
