„Aus dem Garten auf den Tisch“ Über Küchen- und Nutzgartenkultur
Garten- und Ernährungsgeschichte stehen in einem direkten Zusammenhang. Bestand dieser zunächst einmal nur in einer reinen Versorgungsleistung, so bildeten sich im Verlauf der Kulturgeschichte auf der einen Seite Geschmäcker, Zubereitungsarten, Serviermethoden und Tafelschmuck heraus, die auf der anderen Seite durch Züchtungen, Anbaumethoden und Anlage von Küchen- und Nutzgärten ihre Entsprechung erhielten.
Da es bislang keine ausführliche Forschung gibt, die die Zusammenhänge von Küche und Garten beleuchtet, möchte das 11. Kolloquium der Arbeitsgruppe Sächsische Gartengeschichte zunächst einmal den Bereich mit einigen Themen beleuchten und vorstellen. In Anbetracht der Tatsache, dass das Küchengarten-Netzwerk auf gartenhistorischer Seite und die Ernährungsgeschichte des 18. bis 20. Jahrhunderts an der TU Dresden vertreten ist, sollen Impulse für weitere Forschungen gegeben werden.
