Kurzbeschreibung (Deutsch)
Im Rahmen der Klimawoche 2010 wurden an der TU Dresden erstmals die ökologischen Auswirkungen des Mensaessens berechnet und über den "Carbon Foodprint" der jeweiligen Tagesmenüs dargestellt und aufgeschlüsselt. In Zusammenarbeit mit der TUUWI AG mensa universale und dem Studentenwerk Dresden wurden für die Besucher der Mensa Bergstraße zusätzlich zum Essen auch die dadurch verursachten CO2-Emissionen aufs Tablett serviert. Die Aktion erfreute sich außerordentlicher Resonanz - sowohl bei den Besuchern als auch bei den Veranstaltern und wurde daher auch zum evangelischen Kirchentag sowie im Rahmen der umundu-Woche gleichermaßen durchgeführt. Rund 1,35 t CO2 pro Jahr oder 3,5 kg CO2 pro Tag verursacht ein deutscher Durchschnittsbürger allein durch seine Nahrungsaufnahme. Liegt ein Gericht deutlich über der Hälfte diese "Tagesbudgets" im Bereich Ernährung, wird der Fuß rot dargestellt.rnrnFür die Berechnung des Carbon Footprint sind im Sinne einer Lebenszyklusbetrachtung auch Prozesse wie der Anbau des Gemüses, die Weiterverarbeitung und Kühlketten mit einzubeziehen. Der während dieser Prozesse anfallende Energieverbrauch sowie andere entstehende Emissionen werden über den Lebensweg aufsummiert, bis das Essen in der Mensa auf dem Teller liegt, wobei der Kochvorgang selbst bisher mangels verlässlicher Daten noch nicht mit berücksichtigt werden konnte. Die Datenbank PROBAS des Umweltbundesamtes liefert den Rest der benötigten Daten für diese Berechnung.

In the context of the "Klimawoche 2010" (Climate Week 2010) at the TU Dresden, the ecological impacts of canteen food were calculated for the first time. They were displayed and broken down with the carbon footprint for each offering of the day. In cooperation with the TUUWI AG mensa universale and the Studentenwerk Dresden, it was arranged that visitors to the Mensa Bergstraße were served not only a meal on their tray, but also the resulting CO2-emissions. This initiative gained a lot of positive feedback - from the visitors as well as from the organisers - and was therefore carried out again for the for the "Evangelischer Kirchentag" (German Protestant Church Congress) as well as for the "umundu-Wochen".
