31st ZINT Doctoral Candidates’ Forum at the Institute of Plant and Wood Chemistry in Tharandt

On 31. Oktober 2025 two of our team members took part in the 31st ZINT Doctoral Candidates’ Forum, hosted this year by the Institute of Plant and Wood Chemistry. The institute is part of ZINT – the Center for Integrated Natural Materials Technology, an association of nine professorships at TU Dresden, including our Chair of Food Engineering.

• Elle Wilhelm presented her PhD project on
“Texture and structure analysis of meat and meat analogues – a multiscale approach.”
• Richard Bleisch introduced his research on
“Microalgae as a functional food raw material of the future – process development, process monitoring and sensory evaluation using Chromochloris zofingiensis as an example.”

The forum offers doctoral candidates a valuable platform to present their research in short talks, answer questions, and receive constructive feedback across disciplines.

A warm thank you to all fellow presenters , Maximilian Brosche, Peter Gellerich Uhlig, Raphaela Günther, and Miguel Estrada,  as well as to Prof. Steffen Fischer and his team for organizing and hosting the event.
