Abstract:
The implementation of ESD in higher education curricula is nationally and internationally a dynamic field, characterized by political frameworks, competence orientation, and innovative didactic approaches. In vocational teacher training in nutrition and home economics, there is an increasing curricular anchoring, but specific challenges and development needs remain.
In this study, using the methodology of national ESD monitoring, all vocational teacher training locations in the field of nutrition and home economics in Germany are subjected to a curricular analysis with regard to the implementation of sustainability references.
The results show that ESD implementation varies greatly from location to location but is almost exclusively established at the module level and less so in study and examination regulations. This highlights the need to continue the already well-established implementation at the module level even more consistently in the study program-specific regulations.
