Cleaning and modification of surfaces
Contamination and product residua on surfaces of processing plants are of great hygienic risk for food processing industry and generate high costs caused by machinery down time and cleaning effort. By using alternative surface systems the properties of contamination and cleaning can be influenced. A systematic selection of alternative surfaces is currently limited by less knowledge of interactions between surface and contamination. Why protein and potato starch were exemplarily used as contaminants for investigation of adhesion and cleaning properties of different innovative surface modifications. To quantify contamination and cleaning of surfaces, spectroscopic methods (first of all FTIR spectroscopy) are used with he aim to establish FTIR in industrial applications.
