Pilot scale production of exopolysaccharides from Streptococcus thermophilus for their use in non-fermented foods
The majority of stabilizers used in the food industry are hydrocolloids derived from plants which, however, frequently fluctuate in quality and supply. Microbially derived polysaccharides have a high potential for being used as alternative to improve viscosity, stability and the water holding capacity of foods. Exopolysaccharides (EPS) from lactic acid bacteria (LAB), and particularly from S. thermophilus have been reported to be highly efficient. Currently, the isolation of EPS from S. thermophilus is only described at laboratory scale for analytical purpose. In this context the main challenge is to reduce production costs which mainly derive from costs for fermentation medium and subsequent isolation steps.
The objective of the project is to improve an existing lab scale procedure for the isolation of EPS from S. thermophilus. The process will be stepwise simplified and transferred to pilot plant scale by using media remaining after cell separation during the production of starter cultures for the dairy industry. The EPS preparations are tested for their application in food systems.
